The Mace is the envelope that surrounds nutmeg, the latter being the fruit of the nutmeg. Fresh mace has a beautiful bright red color. Dried mace is tinged with warmer colors orange, slightly amber.
Its flavor is in line with nutmeg. It is more fragrant, milder and more refined than nutmeg. It has a small note of bitterness that enhances kitchens that accompany it. So it will be used in rather fine kitchens.
