This spice mixture is fragrant with multiple uses rather than spicy. Curry Madras consists of chili, coriander, ginger, cumin, pepper, turmeric and mustard seed. It is delicious particularly with fish, white meat, lamb, beef and vegetables, but can be used in many other dishes such as shrimp, St. Jacques shells or molds.
